Baumwollschwanz-Kaninchen
As mentioned in my last post on fiddleheads, cottontail rabbits (along with whitetailed deer) are the only mammals that can eat fiddleheads raw. The sprouts of the Ostrich fern gradually build up toxicity in their fronds as they mature, so springtime is the only time those animals can indulge on them. Same applies for us! Humans need to steam this vegetable though, before processing into a delicious meal.
So I’m imagining in my silly romanticism, that while I’m biting into a piece of crunchy fiddlehead tempura, somewhere in the forest a cottontail bunny might be nibbling away on the fresh shoots. And in a way we are having a feast together, nurtured by the spring-filled woods I long for so much.

Baumwollschwanz-Kaninchen
Wie im letzten Post über Farnspitzen erwähnt, ist das Baumwollschwanz-Kaninchen (gemeinsam mit dem Weißwedel-Hirsch) das einzige Tier, das rohe Farnspitzen trotz der vorhandenen Toxizität fressen kann. Je älter der Farn wird, desto gifter sind seine Blätter. Also ist der Frühling die einzige Saison, in der dieses Gemüse genossen werden kann. Das selbe gilt für uns! Wir Menschen müssen es zusätzlich dämpfen, bevor wir es zu anderen Köstlichkeiten, wie zum Beispiel Farnspitzen-Tempura, weiterverarbeiten.
Also stelle ich mir zu diesem Frühlingsbeginn vor, dass ich in mein Farnspitzen-Tempura beiße, während ein Kaninchen im Wald an den rohen Sprossen knabbert … und irgendwie teilen wir uns so ein Festmahl, dass uns der blühende Wald beschert hat, den ich so sehr vermisse.
